A bit of history about woks: the origin of them is ages ago in the vicinity of the city of Canton in China. In those days, there was a scarcity of wood and fire sources. It was important to prepare food as economically as possible. They did this by frying very quickly and preferably all ingredients at once. The solution: a hot fire with on top of that a hollow pan into which the vegetables and meat were cut into small pieces.Due to the high temperature and the shape of the wok, the moisture that is released evaporates almost immediately. This ensures a short preparation time and maintenance of the flavour.
